Vanilla protein flan
Flan with no eggs and no condensed milk, set with gelatin. Around 20 g of protein per serving and a texture identical to the original.

Protein density: 15.4 g of protein per 100 kcal. Above 10 is excellent for satiety and lean mass.
Ingredients
Makes 2 servings.
- Skim milk250 ml
- Whey protein powder1 scoop (30 g), vanilla
- Unflavoured gelatin10 g
- Vanilla extract5 ml
- Stevia / sucralose4 packets (4 g)
Method

Bloom the gelatin in 40 ml of cold water for 5 minutes.

Heat the milk without boiling and dissolve the bloomed gelatin into it.

Let it cool to lukewarm. Do not skip this — hot milk will split the protein.

Blend the warm milk with the protein, vanilla and sweetener.

Pour into moulds and chill at least 4 hours.

Protein ALWAYS goes in once the mix is warm, never hot. That single rule decides whether the flan sets smooth or grainy.
