Black bean brownies
It sounds strange and it works: blended black beans give the dense, fudgy texture of a brownie with no flour and no butter, plus real fibre. Nobody guesses the ingredient.

Ingredients
Makes 6 servings.
- Black beans (cooked)200 g, cooked, rinsed and drained
- Unsweetened cocoa powder25 g
- Egg white90 ml
- Oat flour30 g
- Erythritol30 g
- Vanilla extract5 ml
- Stevia / sucralose2 packets (2 g)
Method

Rinse the cooked beans thoroughly, until the water runs clear.

Blend the beans with the egg whites and vanilla until there is not a single lump. This step decides the recipe.

Add the cocoa, oat flour and sweeteners; blend again.

Pour into a sprayed tin and bake at 175 °C / 350 °F for 25 minutes.

Let cool COMPLETELY before cutting.

Blend until absolutely smooth, and take your time. Any surviving piece of bean will be noticed on the first bite.
