Makes 1 serving.

  • Corn tortilla2 tortillas (56 g)
  • Egg white4.5 whites (150 ml)
  • Nopal / cactus paddle (cooked)80 g, grilled and chopped
  • Tomato40 g, diced
  • Onion20 g, diced
  • Light mozzarella (or Oaxaca)25 g, shredded
  • Salsa verde40 g
  • Cooking sprayto taste

Method

    Grill the nopal on a dry pan until the sliminess cooks off and it takes colour. Chop it.

    Soften the onion and tomato with cooking spray, then add the nopal.

    Pour in the egg whites and stir over low heat until just set.

  4. 4

    Warm the tortillas, fill, add the cheese so it melts in the residual heat, and roll. Serve with the salsa.

The detail that matters

To get rid of the slime, grill nopal dry over high heat rather than boiling it. Better flavour and it keeps its texture.
