Protein chilaquiles
Classic chilaquiles built on baked tostadas instead of fried chips, with shredded chicken turning breakfast into a 50 g protein meal.

Ingredients
Makes 1 serving.
- Baked tostada shell3 tostadas (45 g), broken into quarters
- Salsa verde120 g
- Chicken breast (cooked)120 g, shredded
- Plain 0% Greek yogurt60 g
- Panela cheese (or paneer)30 g, crumbled
- Onion20 g, thinly sliced
Method

Heat the salsa verde in a pan until it comes to a simmer.

Add the shredded chicken and let it take on flavour for 2 minutes.

Take the pan off the heat, then fold in the broken tostadas. Work fast — you want them coated, not disintegrated.

Serve topped with the Greek yogurt (standing in for crema), the cheese and the onion.
The detail that matters
Plain Greek yogurt replaces sour cream with no real loss in flavour and adds protein instead of fat. Add it cold, on top, never cooked into the pan.
