Ingredients

Makes 1 serving.

  • Chicken breast (cooked)140 g, shredded
  • Corn kernels (cooked)100 g, cooked hominy
  • Low-fat chicken broth300 ml
  • Onion30 g, diced
  • Chili powder3 g, guajillo
  • Lime juice15 ml

Garnish (to taste)

  • Cabbage80 g, finely shredded
  • Romaine lettuce40 g, shredded

Method

    Soak the chilies in hot water 10 minutes, blend with a little broth and strain.

    Heat the broth with the chili and simmer 10 minutes so it comes together.

    Add the hominy and shredded chicken; cook another 15 minutes.

    Serve very hot and pile on the cabbage, lettuce, onion and lime.

The detail that matters

Chill the broth for a few hours and lift off the fat that solidifies on top. That's 100 to 150 calories gone without touching the flavour.
