Beef and pepper fajitas
The trick isn't the beef, it's the ratio: twice as much vegetable as meat makes the plate look and feel enormous for very few calories.

Ingredients
Makes 1 serving.
- Lean beef steak (cooked)150 g, in strips
- Bell pepper100 g, three colours, in strips
- Onion60 g, julienned
- Corn tortilla2 tortillas (56 g)
- Lime juice10 ml
- Chili powder2 g
- Cooking sprayto taste
Method

Marinate the beef with lime, chili powder, salt and pepper for 15 minutes.

Heat the pan until it smokes and spray it. Sear the beef in a single layer, 2 minutes a side. Remove.

In the same pan, sear the peppers and onion over high heat so they stay crisp.

Return the beef, toss for a minute and serve with warm tortillas.
The detail that matters
The pan must be very hot and the beef very dry. Wet or crowded, it steams in its own juice instead of searing.
