Grilled nopales with panela
A hot snack that eats like a light dinner. Nopal brings fibre and volume, and panela browns on the grill without falling apart.

Ingredients
Makes 1 serving.
- Nopal / cactus paddle (cooked)250 g, whole paddles
- Panela cheese (or paneer)60 g, in thick slices
- Tomato80 g, sliced
- Onion30 g, in rings
- Salsa verde40 g
- Lime juice10 ml
Method

Grill the nopal paddles whole over high heat until they change colour and stop being slimy.

Grill the panela slices on the same surface, a minute a side, until browned.

Grill the onion and tomato as well.

Serve everything together with the salsa and lime.
The detail that matters
Grill nopal whole and cut it afterwards. Whole paddles release far less slime than chopped ones.
