Garlic shrimp with cauliflower rice

- Shrimp (cooked)180 g, peeled
- Cauliflower250 g, riced
- Onion40 g, diced
- Bell pepper60 g, diced
- Lime juice15 ml
- Chili powder2 g
- Cooking sprayto taste
Method

Pulse raw cauliflower in a food processor until it's the size of rice grains.

Sear the shrimp with garlic and chili powder over high heat, 2 minutes a side. Pull them the moment they turn opaque.

In the same pan cook the onion and pepper, then add the cauliflower and sauté 5 minutes uncovered.

Return the shrimp, add the lime juice and serve.
The detail that matters
Never cover cauliflower rice while it cooks. Trapped steam turns it to mush; uncovered it stays loose and firm.
