  • Zucchini300 g, 3 pieces, hollowed
  • Lean ground beef 93/7 (cooked)150 g
  • Tomato100 g, diced
  • Onion40 g, diced
  • Light mozzarella (or Oaxaca)40 g, shredded
  • Red salsa60 g
  • Cooking sprayto taste

Method

    Halve the zucchini lengthwise and hollow them with a spoon. Chop the flesh you removed and keep it.

    Brown the beef with the onion, drain any fat, then add the tomato and chopped zucchini flesh.

    Fill the shells, arrange in a dish and spoon over the salsa.

    Top with the cheese and bake at 190 °C / 375 °F for 20 minutes.
