Chicken al pastor tacos
Pastor marinade on chicken breast instead of fatty pork. Same pineapple, same adobo, same flavour, with over 50 g of protein across three tacos.

Ingredients
Makes 1 serving.
- Chicken breast (cooked)150 g, in thin cutlets
- Pineapple60 g, cubed
- Corn tortilla3 tortillas (84 g)
- Onion30 g, diced
- Red salsa40 g
- Lime juice10 ml
- Chili powder3 g, guajillo
- Cooking sprayto taste
Method

Blend the soaked chilies with a little pineapple, the lime, vinegar and spices into the adobo.

Marinate the chicken at least 2 hours, ideally overnight.

Grill on a very hot pan until charred in places. Chop finely.

Grill the pineapple separately until caramelised and chop it.

Build the tacos with the chicken, pineapple, onion and salsa.
The detail that matters
Grill the pineapple separately rather than marinating it with the chicken. Raw pineapple carries an enzyme that breaks the meat down and turns it mealy.
